Breakfast of Champions

Mike and I both woke up wanting some pancakes yesterday morning. I’ve been meaning to try creating a protein pancake recipe, so what better day than a Sunday morning to try it out. I made the mistake of not measuring my ingredients. I just eye-balled everything, so I don’t have a recipe to share yet. What went into making them was greek yogurt, oats, cinnamon bun protein powder, cinnamon, milk, an egg, baking powder, and a little whole wheat flour.


I am going to recreate these soon and measure everything out so I can share the recipe. I am going to try to leave the whole wheat flour out and maybe just use a little more oats. The end result was a filling and delicious pancake. I’m not going to lie, a big plate of chocolate chip pancakes would have been better, but these were a good alternative.

For breakfast this morning I popped some of the left over pancakes in the microwave and paired them with an apple, carrot, and celery juice.


I was craving some fresh juice, so I had to work with what produce I had on hand. Obviously, it was slim pickings around here!

As for the rest of the day, it’s a normal Monday around here. Getting some things done for school before classes tomorrow!


Weekend Eats

Today marks the end of my summer vacation. I’m heading back to Gainesville later this morning to get my rear in gear before classes start later this week. I enjoyed my summer at home and it went by way too fast. My last weekend at home was filled with delicious food.


Sunday morning my mom and I whipped up some delicious sour cream waffles topped with a pecan praline and peach sauce. I first saw this recipe on Brunch with Bobby and immediately knew that I needed to make it. This breakfast was so good. Every bite was a little taste of the South.

I may enjoy watching cooking shows a little too much because another great meal from this weekend came from the Pioneer Woman. This shrimp dish was perfect over a little bit of pasta. It was a very colorful and flavorful dish. And although I didn’t make it, my mom said it was very easy to prepare.


The cooking responsibilities now fall to me. Mike and I usually share the dinner duties, but he is recovering from shoulder surgery so I will be the head chef when we get back to Gainesville. Hopefully some more inspiration will strike me soon!

Off to pack and hit the road!

Fitness Friday

Another week has flown by. Late yesterday afternoon I made the last minute decision to drive home to Ocala. I was planning on making my way back today, but figured why wait? I’ll be starting an internship on Monday that will last the remainder of the summer, so I’ll be staying here instead of traveling back and forth to Gainesville. 

This morning began with walking Chipper and then having the best cup of coffee ever. Chocolate Peanut Butter Cup flavor, need I say more? For breakfast I topped some greek yogurt with berries and Kashi cereal. 



After breakfast my mom and I headed to a farmer’s market so I could get some fresh produce for juices. Getting a workout in was next on my list. I headed outside to add another workout to my week while enjoying this beautiful (but extremely hot) first day of summer. My workouts this week looked like:

  • Monday: 1.6mi run outside
  • Tuesday: 10 min warm-up on treadmill + Back + Abs + 10 min of Stairmill
  • Wednesday: 10 min warm-up on treadmill + Chest + Arms + 15 min sprints
  • Thursday: 1.5mi run + Legs + Abs
  • Friday: 7mi bike ride + 10 min jump rope

After my bike ride today I decided to give the jump rope a whirl. This was must first time seriously jumping rope probably since elementary school. I jumped for 30s then took a 10s break and repeated for about 10 minutes. 



I was literally dripping sweat after the bike/ jump rope combo! I am definitely thinking I’ll be adding some jump rope into more of my workouts. It’s a great way to get your heart rate up!

Feelin’ Hot Hot Hot

As I was walking to class today after my workout this song popped into my head because I was feelin’ hot, hot, hot, and I could not cool off! Temperatures this high should only be allowed if you are by a body of water. I’m starting to think that the snow birds have the right idea with heading north the second the temperatures rise above 70 degrees. 

This week I have been putting the finishing touches on my gift box of goodies for my Foodie Pen Pal. I’ve had so much fun coming up with items to send to my recipient. I’ll have a recap post of this month’s FPP at the end of the month so I can share about what I receive. I mean, who doesn’t like getting treats in the mail?

The past couple of days I have been visiting playgrounds in the area to observe their condition for a class project. I feel like a total creeper going to these playgrounds. I try to complete my checklist and snap some pictures as quickly as possible. Today I did happen to come across this gem. 



What an awful toy! I immediately thought of reptar from Rugrats when I saw this. Personally, I don’t think it looks like a very inviting play toy. 

Back to the usual. Last night I finally decided to give overnight oats a try. I mixed my oats, greek yogurt, and almond milk together and set in the fridge to thicken over night. 



This morning I added some cinnamon to the mixture and stirred it all up. It was the perfect consistency so I didn’t add any extra milk. In my mind I thought this was going to be the best breakfast off all time, but I have to admit that I just wasn’t a fan. I would rather just eat my oatmeal hot. I did like the fact that I stayed full for a long time. All the added protein from the greek yogurt was satisfying. I may have a second go at the overnight oats in the future to see if I enjoy them any more with some extra toppings like berries, but until then I’m a hot oatmeal kind of girl. 

The Good Things in Life

This weekend was a great one. Here’s a little recap of all the good things in life that were appreciated these past couple of days. 

  1. Having fresh flowers in the apartment. My mom came up to hang out for the day yesterday and she bought me these beautiful sunflowers. There is something about having fresh flowers around. They can just brighten up any room. Image
  2. Hanging out with family. Like I said, my mom came into town yesterday and we had a blast while going to the mall, a few little shops, lunching at The Flour Pot, and then heading to Trader Joe’s. I love living close enough to my family where I am able to see them often. 
  3. Date Nights. Last night Mike and I headed to Limerock Road in Haile Plantation and had a delicious dinner. We were both in the mood for burgers. I went for a burger topped with smoked gouda, BBQ sauce, and an onion ring. Mike’s burger had buffalo sauce, blue cheese, and carrot slaw on top. We both decided this restaurant would be a repeat. 
  4. Fresh baked goods. Yesterday while I was at the grocery store I was having a serious hankering for some muffins so I decided to buy a muffin mix. This morning when I woke up I knew there was only one thing I wanted to eat for breakfast… those blueberry muffins. So I got to work. I made the muffins a little healthier by subbing applesauce for the vegetable oil, almond milk for the milk, and eggbeaters for the eggs. And they were still delicious, especially paired with a cup of hot coffee. I also snacked on some juicy Florida strawberries while I baked, which made the whole process worthwhile.Image

The best part about the weekend is that it is not yet over. I plan to hit the gym in a little bit since I took the day off yesterday. And then I have some homework and relaxation occuring in the near future. 

Running with the Pollen

Weekends go by way too fast! This weekend was full of workouts, good food, and lots of schoolwork. The highlight of yesterday was a great Vinyasa Yoga class I took in the morning. I really do have a new found love for yoga. I always try to do a class over the weekend, because I feel like it wipes away all the tension that has built up over the week. I always leave yoga class feeling refreshed and ready to tackle another week.

This morning I felt like making something a little special for breakfast, so I whipped up some whole wheat apple cinnamon pancakes. I will share the recipe as soon as I perfect the measurements (something was slightly off when I made them). After breakfast, Mike (my boyfriend) and I went for a run. I have slowly been trying to get back into running after being sidelined for a few weeks with a hip injury. Today’s run felt great, but pollen is outrageous here in Gainesville and my allergies are now off the charts.


After the run we headed to a local dog park to let Chipper get some exercise. We met up with some friends and had a great time walking around the trails and letting the dogs run around. Needless to say, we are all exhausted around here tonight! Time to gear up for another week.
